Restaurant Management and Food Service

The Restaurant Management and Food Service program at Ha Long University is an ideal field of study for students who have a passion for professional cuisine and wish to elevate culinary arts to new heights and integrate globally.

By studying Restaurant Management and Food Service, students are equipped with specialized knowledge in economics, such as economic mathematics, supply and demand theory, market dynamics, and production factors, as well as economic law. They will gain fundamental knowledge about management and business management, including management concepts, management styles, decision-making in management, and accounting principles. Students will also learn about tourism overviews, the nutrients in food, and how to construct scientific and reasonable meal portions. They will study the types of food used in preparation, food safety, and hygiene in cooking, as well as the customs and practices of various countries around the world and Vietnam. Additionally, they will learn how to create different types of menus and the art of garnishing and sculpting fruits and vegetables for culinary presentation.

After graduating from the Restaurant Management and Food Service program, students can take on various roles such as:

  • In hotels and tourism businesses: positions as supervisors, team leaders, managers, or directors of restaurant departments, food preparation departments, human resources, sales & marketing, administrative departments, accounting, etc. They may also manage resorts or serve as executive directors of restaurants.
  • In government management agencies: specialists in departments under the Department of Tourism, specialists in divisions under the General Department of Tourism, and departments related to market management and commerce in various levels of government.
  • In tourism-related organizations and institutions (such as tourism training institutions, research institutes, and non-profit organizations): trainers at tourism training institutions, and consultants for tourism development.
  • Opportunities for further study after graduation: the ability to self-research, study, and enhance skills; the potential to continue studying for a Master's or Doctorate in the field of tourism.
